Dragon Fruit Jam Tarts

Ingredients:

For the Tart Crust:

  • 10 dates, deseeded
  • 7 digestive biscuits
  • 2 tablespoons melted butter

For the Filling:

  • 1/2 dragon fruit, scooped
  • 2 teaspoons sugar
  • 1 teaspoon lemon juice
  • Strawberries, sliced (for garnish)

Method:

1. Prepare the Tart Crust:

  1. In a mixer, combine dates and digestive biscuits. Blend until you get a smooth mixture.
  2. Transfer the mixture to a bowl, add melted butter, and mix well until it forms a dough-like consistency.
  3. Line tart moulds with parchment paper. Divide the dough evenly among the moulds and press it down firmly, creating a slight dip in the center for the filling.
  4. Place the tart moulds in the freezer for 10-15 minutes to set.

2. Make the Dragon Fruit Jam Filling:

  1. Scoop out the flesh of the dragon fruit and blend it into a smooth pulp.
  2. In a non-stick pan over medium heat, cook the dragon fruit pulp with sugar, stirring occasionally. Simmer for 20-25 minutes or until it thickens to a jam-like consistency.
  3. Add lemon juice, stir well, and cook for an additional minute. Remove from heat and let it cool completely.

3. Assemble the Tarts:

  1. Remove the prepared tart crusts from the refrigerator.
  2. Spoon a generous amount of dragon fruit jam into each tart.
  3. Garnish with sliced strawberries for a fresh and vibrant touch.

Tips:

  • For added crunch, sprinkle some crushed nuts on top.
