Chilled Bliss: Watermelon Salad and Its Flavorful Friends

Looking for a unique and visually stunning salad? This vibrant mix of fruit and vegetables is a perfect balance of sweet, salty, and refreshing. With watermelon, grapes, and black cherries blending seamlessly with cucumber, celery, spring onions, and peas, this salad is a must-try for your next meal. The addition of feta cheese and a light 🍉 watermelon-olive oil dressing adds the perfect finishing touch.

Ingredients:

  • ½ a watermelon (cut into triangles)
  • 20 white grapes (halved)
  • 20 fresh black cherries (stoned and halved)
  • ½ a large cucumber (cut into batons)
  • 4 spring onions (finely diced)
  • 2 celery stalks (diced)
  • 20 sugar snap peas (trimmed and blanched)
  • 1 wheel of feta cheese (crumbled or diced)
  • Watermelon juice (from trimmed pieces)
  • Extra virgin olive oil
  • A splash of white grape or apple cider vinegar
  • Salt and black pepper (to taste)

Method:

  1. Prepare the Peas
Trim the ends of the sugar snap peas and remove any strings. Blanch them in boiling water for 30 seconds, then immediately refresh in chilled water. Drain well.
  2. Shape the Watermelon
Slice the watermelon into 1 cm-thick triangles. Retain any offcuts and juice for the dressing.
  3. Prepare the Cucumber
Peel the cucumber, slice into chunks, and cut into matchstick-sized batons. Toss with a drizzle of watermelon juice to keep them fresh.
  4. Cut the Fruits and Vegetables
    • Halve the white grapes and cherries, removing cherry stones.
    • Dice celery and spring onions.
  5. Prepare the Dressing
In a jug, combine watermelon juice, a glug of olive oil, and a splash of white grape or apple cider vinegar. Season with salt and black pepper. Mix well.
  6. Assemble the Salad
    • Arrange watermelon triangles in rows on a large flat platter.
    • Place cucumber batons between the watermelon slices.
    • Scatter halved grapes, cherries, spring onions, and celery evenly over the platter.
    • Add crumbled or diced feta and position the sugar snap peas decoratively across the salad.
  7. Drizzle with Dressing
Pour the prepared dressing over the salad, ensuring even coverage.

Additional Tips:

  1. Make it a meal: Add grilled chicken strips, seared shrimp, or toasted nuts for added protein.
  2. Presentation matters: Layer the salad with care to create a visually stunning dish.
  3. Customisation: Substitute cherries with pomegranate seeds or white grapes with green ones if preferred.
